Lemonade Cupcakes

I made these the other night for our Sunday dinner dessert. Can i just tell you they disappeared in 2 minutes! One of my guests (Marc) ate 4 just by himself! They are very moist and have a little zing to them. They are defiantly one of my new favorite desserts!

1 6 oz. can frozen lemonade concentrate, thawed
1 box WHITE cake mix (make cake mix according to diretions on the box)
1 (8 oz.) carton sour cream
3 oz. cream cheese, softened

Preheat oven to 350 degrees
Remove 2 Tbsp. of lemonade concentrate from the can and discard
Combine remaining concentrate, cake mix, sour cream, cream cheese and eggs in large bowl
Beat with a mixer until well blended
Spoon batter into paper lined muffin tins, filling 3/4 full
Bake at 350 for 20 min. or until cooked through

1 oz. butter softened
3 oz. cream cheese, softened
1 1/2 cup confectioners sugar
1 Tbsp of lemon rind (1 whole lemon)

Sift the sugar into a medium size bowl. Add other ingredients and beat well until smooth and creamy. Add milk, gradually to make frosting creamy. DO NOT get to wet. It will not set up ( I messed up my first batch by doing this:)

*Cute idea: Instead of wasting my lemon, after I used the rind, I cut into thin slices, slit them in the center with a paring knife, twisted them, and put them on random cupcakes I had placed on a cup cake stand. They looked like they were straight from the bakery!

This looks really yummy. How many eggs do you put in the cupcakes and when it says 1tsp of 1 whole lemon what does that mean? I really want to make these so let me know!!

Sorry Jess I should have more specific. Just make the cake mix according to the directions on the box. And the 1 tsp. of lemon, is LEMON ZEST. It says 1 tsp. but I used the whole lemmon and it was SO good. Let me know how they turn out!

I found that if I make the frosting the day before it takes on more flavor from the lemons. Plus the cold frosting is SO refreshing. Also, I didn't put cream cheese in the cupcakes, just sour cream. THESE ARE SO GOOD!
